La Mousse au Chocolat

Ingredients  – serves 4-5 people

  • Semi-sweet chocolate – 68% Valrhona or Trader Joe’s Belge semi-sweet chocolate bar.
  • unsalted butter: 1 tsp
  • eggs: 4 (or 3 eggs + 1 egg white only)
  • a pinch of salt

Melt chocolate au bain marie with the butter. Do not stir. Remove from the heat as soon as it’s melted.

Break eggs and separate the whites (in a large mixing bowl) from the yolks (in a small bowl). Pour yolks in the melted chocolate and mix at fast speed so that the yolks don’t cook.

Add a pinch of salt in the egg whites and wisk until very stiff.

Mix a little of the egg white with the melted chocolate so that the chocolate becomes a littly runny. Incorporate the rest of the egg whites very gently with a wooden spoon to avoid the egg whites from collapsing.

Store in the refrigerator for a few hours until the mousse is set.

PS. I grate a little orange rind in the chocolate! Delicious ….
