Ingredients  &#8211; serves 4-5 people

Semi-sweet chocolate &#8211; 68% Valrhona or Trader Joe&#8217;s Belge semi-sweet chocolate bar.
unsalted butter: 1 tsp
eggs: 4 (or 3 eggs + 1 egg white only)
a pinch of salt

Melt chocolate au bain marie with the butter. Do not stir. Remove from the heat as soon as it&#8217;s melted.
